WHAT IS GOOD PASTA
Check for the words 100% DURUM SEMOLINA.
This pasta is the highest quality and most durable.
Watch for pasta made with Semolina as an ingredient. This means that
the pasta is a lower quality pasta made with Durum
Semolina mixed with lower grade flours. This type of pasta will not hold
up as well when cooked.
Look for cracks (checking) and broken pieces. Dry pasta with
cracks will break apart when cooked.
Look for a fine white powder coating the dry pasta. This could be a sign
of temperature abuse, which will make the pasta more brittle.
When cooking, watch for excessive foaming in the pot. This usually means
that the pasta is made with a combination of lower grade flours and starches.
When cooking, watch the cloudiness in the water. Excessive cloudiness
usually means lower grade pastas made with added starches.
